The history of Jerez goes back to ancient Tartessos. The Phoenicians reached its surroundings 3,000 years ago in order to found the colony called Xera.

Under Roman dominion, the city was called Seritium and experienced - during the Empire - a period of great prosperity, being settled by an aristocracy - of trading origins - who dedicated themselves to fostering ranching and agricultural activities.

Romanization was so intense that the arrival of the Gothic tribes to the peninsula did not substantially modify life in the town.

It is due to the Muslim domination that Sheres or Xeres, during the Almoravid (1087-1146) and Almohad (1146-1264) periods, gets fortified and the route of its streets is made. Additionally, new crops are introduced (wheat, vine and olive), and horse breeding starts.

After various failed attacks, Xeres falls to the Christian troups headed by king Alfonso X in 1264. For a long time, Xeres remained a border and skirmish town between the Christian invaders and the recently expulsed Muslims who wished to recover their possessions.
